I was thinking I may need a better board for the 760 sli If I want the full potential out of it any suggestions? I am leaning towards the sli build at this point

Id stick with your 1st solution with the 780 and get a SSD system drive, and maybe perhaps find a used 660 or even 560 off ebay for the rest of your monitors. Or maybe you have another card collecting dust you can use too...

btw: what size and resolution your monitors using?

Or ditch the surround setup and wait for the Oculus Rift to come out... Which is what I am doing...
