Ok, so let me start saying that I know there're a lot of topics out here and there talking about new build for new PCs and etc. I know a lot of people talk about that here and I know I can easily find it over the internet, but I've already read most of them, the result? I'M CONFUSED!

I want to upgrade my computer, new GPU and PSU, let me tell you what I have, then I say what I want and also my doubts.

1º What I have:

Asus P8H61-MLX
I3 2100
No GPU
HD 500 GB
Default PSU (200W I think?)

2º What I want:

PLAY GAMES! I've been using low end configurations since I consider myself a gamer, always playing on Super Low Definition (at the moment I have a 1600x1400 monitor and I play Darksiders 1 in 800x600 and low settings to get a good fps, yes, you can cry now...).
What I want to leave clear is that I DON'T want to play everything in Super High Definition, can I play it in Medium with my correct resolution? Ok, that's fine!
I've been saving for Gtx 560 TI, which I think it's almost a high end GPU, but you know, we can always dream. It is a bit out of my budget but if you guys tell me it is REALLY worth, I can wait one more month or two to buy it. But remember, I don't want to play everything in Super High, so if anything else that would be any 50$ less expensive but still worth, TELL ME! Please :)
My biggest problem here is that I know nothing about AMD, I've read that Nvidia has a lot of technologies which AMD doesn't have (is it true?) but I've heard about its new technology (mantle I think) is it worth a look? A friend told me about R7 260X, it's in a good price, is it worth?

Finishing the second topic, if you want to know my budget I don't know how to tell it to you, I live in another country, but lets make this way: GTX 560 TI is my limit, anything more expensive I can't afford, i think by this way we may get to a conclusion.

3º Doubts (I'm going crazy...)

-My motherboard is PCI 2.0, can I put a 3.0 GPU there and still get a good result?
-Please, if you have any idea of a GPU, can you please tell me the PSU too? I've already found one, but I want to see what you guys suggest.
-Is the 560 TI worth for me? Even with an I3?
-560 TI, 650 TI, 660, 550 TI, GOD HELP ME o.o I may know which one is the best, but I don't know which of them is worth for me (I don't know the final result).
-What you guys think about the next generation? am I be able to play any of them?

Please, tell me what GPU and PSU would fit my needs.

I see very little point in getting a 560ti, it's a very very old card now and you can get much more for your money. The 260X is definitely a good choice, at your resolution you probably wouldn't need any more power than a 260X. As for nVidia vs AMD as far as their technologies are I'd say it's a tie unless you're focused on Mantle in which case AMD is certainly ahead. nVidia has PhysX and better 3D support but with a card around this performance you likely won't be interested in either of those technologies.

1) A PCI-E 3.0 card will run fine on a 2.0 motherboard unless it's something crazy like a 290X or something
2) I'd recommend the 260X or if you can stretch to an R9 270 then get that (Definitely not a 560Ti)

3) A 260X will be a nice balance with your CPU, and with games supporting Mantle you'll get a good performance increase as it takes the load off of your CPU
4) A 260X or 270 will play most games this gen and next gen, it may not achieve 60FPS with high settings in everything but I can assure you it will play game at a playable frame rate for a while to come

So my recommendation:

GPU - R7 260X (or R9 270 if you can afford it) I personally like Sapphire cards
PSU - Corsair 430W CXM (Just a simple, well reviewed 80PLUS PSU that is modular, for a very good price)

So, ok, I give up about 560 Ti, looking for the 260 I found this one (link bellow, sorry about the Portuguese website, but I think you can still find the specs), is it ok beeing 128 bits?

as it seems quite a bit cheaper and the only real difference is that it is clocked 100MHz less but you could easily push that up 100MHz yourself with no effort.

Ok, about the PSU it says 500W, is CX-430W really enough?

The PSU will suffice.
These recommendations about the PSU are usually higher than neccesary, just because you might have a really poor quality 500W, which gives you the same power as a 400/450 W good PSU.

If you go with the recommended one, you should be ok.

But can I make a final question? I like hardware and honestly I love seeing that motherboards and those GPUs in SLI (3 Titan OMG), but I know I still lack some knowledge, so, let me ask just one thing, Gtx 560 Ti is Directx 11, 256Bits and some other good things, however you said 260x is better, where should I look to know this? Is it because it's a 500 series (which is old) or is there a specific spec that makes it better?

It's difficult to say, there's no single thing which makes one GPU better than another one. For example 256 bit isn't always worse than a 384 bit card. The only way you can directly compare cards by their specifications is if they are the same family of GPUs, for example a 2GB GDDR5 version of the 260X will be better than a 1GB GDDR5 260X but that isn't necessarily true across different GPUs. The best option is to look at reviews and benchmarks.
