Let's say i have a samsung 840 evo ssd in my build as a boot drive. Using the Samsung Magician Software i set it to rapid mode and get speed gains. Now, what if i decided to add in another samsung evo and set both ssd's up to raid0. Would that mean that i would keep the speed gains from rapid mode and get the speed gains that come out of a a raid0 connection on top of it?

Just out of curiosity. ;) Im just so satisfired with my evo that i thought about getting another one. In enjoy tweaking and upgrading and making fast things even faster. That's all.

So basically, what would be preferable two ssd's in raid0 or one ssd in rapid-mode?

I dont think that is true. It depends what you are using the raid 0 drive for. I am raiding two samsung evo ssd's because I will be doing video editing that will benefit from that more than the rapid mode. Maybe I am wrong though.
