Would you trust the power supply? Meaning do you trust the brand in reliability? Also if it caught fire and fried my mb while the warranty is still there would they replace the mb because there product was faulty?

Seasonic is a very good company, i have a 550w Seasonic psu powering a even more power hungry system than yours.
by the way 850w is overkill, you should seek a 650w instead, would still leave some headroom.

If the psu fries your pc, they're only going to replace the psu. But the better the brand & quality, the more "safety equipment" does the psu have against any failures. :)

this will freak you out:

i know people that SLI 770s with a 750 watt PSU and not have problems.

and yes, they are overclocking too.

GeForce GTX 770 2x SLI - On your average system the cards require you to have a 700~800 Watt power supply unit as minimum.

BUT every system is different; on average an intel setup will use less power than an AMD (not just the cpu but also the chipset on the motherboard) and overclocking will use more. (again the intel will use less power.) lets take a look at a similar system of what you have in mind that is OC'd:

now that is an 8350 (uses a little more than your's as you can see for the stock speeds) but lets use it to error on the side of caution.) the power is measure w/o taking into account the PSU efficiency. lets assume its 90% so we have 264.87 then add the power usage that guru 3d got: 402 (which might be a slightly heavy handed since techpower up gets between 180- 192 for "peak power" for a single card [192*2= 384] but again that would be an error on the side of caution.)

that's a reasonably over estimated 665 watts. and keep in mind not all of that is on the 12 volt rail; mostly just the cpu and gpu - a few watts for fans and HD motor. BUT a quality 750 watt PSU can handle that load for gaming w/o any problems.
