My PC has a 2500K cpu, a 560 Ti GPU, and a motherboard (LGA 1155) with PCIe 3.0 slots. I am aware that the performance drop from a curent (600 & 700 series) PCIe 3.0 GPU but am curious about the 800 series coming out. If I go with a GPU from the 700 series I can run it now with almost no performance loss but if I wait for the 800 series I believe that I will need an ivy bridge cpu if the GPU's use more of the bandwith of the PCIe 3.0 slots. What should I do?

Currently nothing to worry about. Stay as you are since maybe there will be other upgrades like DDR4 that would make a platform upgrade viable to get the change.

I am trying to only purchase a GPU that will keep my PC going for another couple of years. I just wanted to know if something like a 770 was worth it since I would only need to purchase the card or the alternate route which is a 800 series card and an ivy bridge cpu.

Currently the GTX770 would work fine with your setup, the first new card has been introduced and is called GTX750Ti.
