These are the specs
Gateway Tower
I3 2130 CPU 3.40 GHZ
GTX 660
PSU 600

Question(2 parter)- I plan on upgrading to the Gtx 760. I know the I3 would hold the card back from its full potential. If I wanted to go I5/i7 would it be too risky/probelematic to switch out the i3 motherboard for an i5 or i7? or would it be easier to just sell my tower and buy a tower with i5/i7 prebuilt in?

Also the reason I am trying to get all my specs up is because I plan on buying the Oculus Rift when they release the consumer version. Could my current rig handle the rift when they release the consumer version if I only upgrade the graphics card to 760? Or would it be wiser to jump up to an i5/i7 along with the gtx 760 to handle the consumer rift?

Solution
You could replace the i3 with a Sandy Bridge i5/i7 and keep the board. Getting a new board will require a new copy of Windows.

Don't know if you'll get good performance for the Rift with a 760.

One of my teachers got a Oculus prototype last year and made me try it. It was running on a laptop. It was also a very simple 3D house with interior and exterior garden. As of now, there is not sufficient data to know how CPU and GPU heavy will OR AR (Oculus Rift Augmented Reality) games be. My safe bet is that it will be very dependent on title.

Your problem is that you need to find a Sandy Bridge CPU or if your motherboard allows it through a bios update - an Ivy bridge CPU which are easier to find. Please post your motherboard model and brand, so we can further advise you.

Also - swapping out a CPU is an easy task, I mean computer have become like lego for grownups. Even a monkey with a screw driver can be tough to put one together. But if you are really worried about doing it yourself - ask a friend who has more know-how or buy a pre-made tower.
