I believe I have finally installed this successfully, so it is a clean Drive with nothing on it yet, how do I check the speeds on it, to make sure everything is up to par, and what speeds am I looking for? Thanks in advance!

Thanks for the tips! I used the Magician Software, and after optimizing everything, looks lilke I'm getting

Random Read Speeds: 87317
Random Write Speeds: 132836

Is this good for my Drive?

Now next, I want to do a fresh install of the windows 7 that's current installed on my HDD, onto my SSD.
And then I want to migrate some important applications over.

It's my understanding that the best way to do this is to disconnect my current HDD, making sure only my SSD is in, then insert disk to install.
But after that, will I be able to plug in my currend(old) HDD with the OS still installed on it, boot Windows 7 From my SSD, then just copy over the APPS I want, then be able to reformat my old HDD?

You will not be able to transfer over applications from a different Windows installation without cloning software. Applications make changes to the registry which you can not move over and require specific files in specific locations. You can either install Windows and then reinstall the applications, or use the Samsung Cloning software to clone your data from your HDD to your SSD assuming you have enough space.

You are correct in that you should unplug the HDD before installing your OS, as the default Windows installation process has a habit of putting your system reserved partition on other disks for some reason. To prevent this from happening and having your OS rely on two drives, it is best to remove the possibility of it happening by removing the drive from the equation entirely. After the install, you are able to just plug in the drive and copy data over, but applications will not run on the installation of Windows on the SSD (meaning you can copy over photos, movies, music, office documents, etc).

So I install Windows 7 on the SSD, plug back in the HDD (windows 7 still installed) and I can't transfer over any apps like MS Office (because I don't have the KEY anymore, and this is the only PC it will work on) IS there a way to move it to a different harddrive, or am I stuck with it on my current one. What if I want to format my HDD once OS is installed on my SSD?
