My first question is if I can use more than 1 6670 with the A8-5600K APU, and if I can, would those 3 gpu's be better than one GTX 570?

Not sure if you can do tri-crossfire with that configuration. They use the term Dual Graphics not crossfire for APU/GPU combinations. Even then if it isn't that good because one of the 'cards' has to use DDR3 system memory rather then GDDR5 found in the nicer 6670s.

A single GTX570 is still a potent card, though not the best value if buying new (can't find one at my usual retailers actually)

A GTX760 would be faster for not a great deal of money. If you are talking used, that depends on the price.
