These are the two cards that I have narrowed down. What would be better for running games on max settings with multi screens? and also going SLI later on?

I would go with the 780 Ti , and upgrade to another one down the road if you need the extra performance.

I would also go with the 780 ti. I would opt for a single GPU as opposed to SLI or Crossfire, though Nvidia is known to have good driver support but in most games A single Powerful GPU is probably going to have less stutter then an SLI setup.

GTX 780 Ti. The 780 Ti almost catch up the 690 which is the 680 in SLI. The 680 is similiar to the 770 which is better then the 760
