I'm currently running the Corsair CX750M psu with 2 Gigabyte R9 270s. These 270s take 2 6-pin connections which is exactly what the psu has. I have a couple of questions around this:

I have the molex to 6-pin that come with the cards. If I were to add a 3rd card using the molex connection would the 3rd card draw enough power?

Is 750w enough for these 3 cards. Looking at the build on PC part picker it seems ok.

Or should I move up to a psu with more watts and more pcie 6-pin connections?

Thanks in advance.

You can't run 3 R9 270s in Xfire, it's a maximum of 2

You are in a slightly unfortunate situation that you picked one of the few R9 270s which take two 6-pin power connectors, the majority take one.
750W is way more than enough power, you could probably run them on a 600W, but most PSUs are designed to run a smaller number of more powerful cards rather than a higher number of low powered.
Molex adaptors are just bad. They have a number of issues based around the shape of the connector itself, and the fact it is designed to run multiple voltages.
What might be an option is to use a PCIe 8pin to dual 6pin adaptors. I've seen them before but they aren't common.

As it is the fashion to sell PSUs with 6+2pin connectors, finding a quality unit with 6 means going to incredibly high (and excessive) wattages. Seasonic G-series 750W would work though.
