The two temps you see are reported from two different locations.
Core temp: The first one with a max temp of 61C is your core temperature. Unlike the intel cpu's which report temps of individual cores, AMD cpu's have one sensor which reports the max reached by one of the modules(this is a conjecture most people go with as no exact data is available on this).
Package temp: this is the temp info gathered from the temp diode located near the IHS (Integrated heat spreader). That is the shiny metal part that your heat sink touches. Naturally as this is the junction which is further away from the modules and has heat constantly being conducted away from it, it is at a lower temp than the cores.
Which to consider: Your cpu will invoke thermal throttling when the cores reach their maximum temp ceiling. So long as you are not throttling, the temps are fine and you can cary on with your task seamlessly.
The package temps are the ones you should be really worried about because if that is high then your cores are obviously operating at a higher temp. Manufacturers base their cpu's operating limits based on the package/case temp.
Cores have TjMax (maximum junction temperature) as their maximum limit.
For example: The Tcase/maximum operating temperature of my i5 2400 72-74C (do not remember the exact value) while the TjMax limit is 99-103C.
