Would the 1000w psu be enough for 4 GPUs by any chance? If not, would having only 2 x GTX 780 w/ a 1200w psu be bad for the psu bc im not utilizing a bulk of its power?

Solution
No. 4 GTX 780s take up >1000 watts themselves and there isn't enough Amperes on the rail to support them with overclocking. The bigger question: Why would you need 4 GTX 780s? The fourth one adds 1-2 FPS from 3 GTX 780s, which only add 4-5 FPS from 2 GTX 780s. Unless you are gaming on more than 3 monitors and/or video editing, then a single GTX 780Ti is enough. Use a Corsair AX 860i for single GTX 780Ti.

Thank you for the quick response! I've decided to go with dual 780Ti's. Thanks for the info! Would you happen to know if Gigabyte/MSI/Asus's versions of nvidias GPU's support SLI?

All companies, as long as it is Nvidia GPU, will support SLI. I recommend EVGA if you are going to be overclocking and/or installing a different cooler eg. waterblock onto your GPU as their warranty is better. Asus has the best components, but their warranty does not cover removing the stock cooler. MSi has decent-quality components and same warranty as Asus, but is much cheaper than the two mentioned before. I personally dislike Gigabyte for their massive coolers and in-efficiency, but they are a reliable company.
