AMD 5800K different temperatures

Hello,
I just installed the 212 EVO heatsink on my CPU and i get a lot of different readings on Temperatures with different programs.

Right now i am doing the torture test from Prime95:
AMD overdrive 43C
Speedfan 40C
Open HW monitor 27-31C

I am looking on overclocking the 5800K and my RAM for better performance.
There are 3 fans in my pc for my cpu only, 1 front high (in) the 212 EVO and the fan back high almost next to the 212 EVO.

PC specs:

Case: MS tech Hornet
CPU: 5800K black edition
GPU: 7660 and AMD 6670
RAM: Kingston 8192mb DDR3 Hyperx
Motherboard: Gigabite GA-F2A75-D3H
PSU: MS-tech 850W

Which temperature should i trust and how can i best overclock the 5800K and RAM for stable performance.
I am a total newbie to overclocking, so a step by step with numbers would be appriciated.

Well, during the Torture Test getting those low temperatures is weird.
Or could it mean i can overclock it to really high?
The problem is that there is only 1 (or more) temperature sensors on my CPU and what if they are all wrong and i might be ruining my pc with it.
So,
HOW to know which temperature to trust for getting the overclock?

I would suggest just using hwmonitor and running a game. Monitor the temps while you play, and you should get a more real world result than you would get from a stress test.

During gaming, Planetside 2.
AMD overdrive 48C
Speedfan 37C
Open HW monitor 24-32C

After closing the game AMD goes higher (63) and the rest go lower immediately.

Now what?

How can i make sure the sensor is broken?
I know in BIOS the temperatures seem different too, although steady, if one goes up, the other one goes too, with the same speed etc.

To be honest, there really is no way to tell unless you bought a temperature probe, and attached it to the CPU while it is running.

How should i check bios;
Running prime95 and quick reboot and reboot without Prime95 running beforehand?
Installed speccy, running Prime95 gives me 75C
(Torture test FPU)
Without torture test it goes back to 50C

Looks right, a bit high though.
Since i have enough coolers 75C it seems that there is something wrong here.
Fanspeed is 1121 RPM on load, 670 on standby.

Is there a way to be sure what temperatures are right, what if the BIOS temperatures are also wrong?
