Higher Quality RAM? Help!

I am looking to buy a new gaming laptop rig with a 4700MQ processor, Nvidia 780M card, 240 SSD/1TB 7200 RPM drives, etc. I am quite certain for the size of RAM I want (16GB - I've heard it's a little overkill, but I'd rather have overkill than not kill at all). However, when purchasing my laptop, I can't distinguish between different manufacturers of RAM. The standard for 16GB seems to fluctuate a lot. For some companies' RAM they are asking for $100-$200 more for the same amount of RAM at the same speed, 1600MHz. It's all DDR3 RAM as well, if that makes a difference. So why the price difference? Then why the massive price difference? Is there really no difference between the stock 16GB of RAM and a $200 more expensive set?

Also, second question, is 4x4GB sticks better or 2x8GB sticks? or does it make a difference at all?
