Reasons why go i7? Are you going to use CPU intensive applications as well? If not then I don't see a reason not to get the i5. Also state if you're going to overclock the cpu now, in the future or not at all.

an i5 with a great graphics card will be better than an i7 with a less good graphics card. It doesn't make difference at all does it in gaming? So get an i5 with quality components instead of an i7 with average components.

for a system wjth just one gpu would the 550watt be enough. If you wanted some more would the next be good,
http://pcpartpicker.com/part/xfx-power-supply-p1650snlb...
for sli would the next do as a minimum,
http://pcpartpicker.com/part/xfx-power-supply-p1750snlb...
or this "gold" efficiency rated psu,
http://pcpartpicker.com/part/thermaltake-power-supply-t...

Another nice not to expensive case,
http://pcpartpicker.com/part/antec-case-gx500
or you could put the money saved in a more expensive case.Or even a ssd!
