Upgrading from nVidia 590GTX

I made myself a gaming computer about 3 years ago and it seems that it is finally starting to give way to the newer games. I had to dumb down Thief to Normal graphics quality for smooth gameplay. My current parts are below:

Processor: Intel Core i7-2600K
Video Card: ASUS GeForce GTX 590
Motherboard: ASUS P8P67 WS Revolution
RAM: Corsair Vengeance 2x4GB
Power Supply: Cooler Master Silent Pro Gold - 1000W
Hard Drive: OCZ RevoDrive X2 PCIE-240GB
OS: Windows 7 Home Premium
Monitor: Can't find the model number, but its 3D vision capable, 120Hz, 22"

So I am considering getting myself a new video card and have a couple questions:
Should I wait for the 800 series, or would something like the 780 Ti be better?
Can I SLI newer cards with my 590?

Price isn't too much of a concern.

You'd have a hard time finding another 590 for a good price, then you have to worry about the disgusting amount of power and heat (590's aren't the worst but they're up there), a 780ti will defiantly outperform a single 590.

Yeah I am thinking of just one card for now. Can I use SLI with the 780ti and my 590? Is it worth it? I've never actually done it before =/

You are NOT able to SLI different cards, they have to be two of the same. Running multiple cards can cause more problems, such as stuttering, than a single card setup would so a lot of people prefer to have just one card.

So from what I am seeing, the 780ti is ~700 and each 770 at 4GB is ~400-450, so my question now is how much of a difference that extra $100-200 gives me? From what I am reading, 2 cards practically doubles the computing performance, so if I double the stats for a 770, they do go pretty far above those of the 780ti. I'm just not sure how accurate that is.
