I want to install windows 7 on the boot drive (C) and all other applications on another drive. Will this work?

Yeah it will work but you have to be careful while installing applications. The application will ask for installation location which is C drive ( or any other where OS is installed) Just change that location to your desire drive
Sometimes some applications ask for automatic or manual configuration while installing so choose manual to change location
