Will the 1000w/850w take 2 asus gtx780 dc2 sli ???

It will EASILY run 2 780s. Heck, you could probably even run it without a single issue on 750W. But I would stick with 850W for the sake of upgrade headroom.

If you feel more comfortable with a 1000watt PSU then by all means use it. The bigger the better. It will cost you no more to run than any other PSU and you will never have to worry about running out of power. Think of it as an investment in an insurance policy. Everything should be so easy to over design. I prefer Seasonic.
