which CPU to use for Virtualizing? (intel based)

hello, I'm upgrading a couple of computers and trying to figure out which Intel based cpu works best with virtual machines? i3 or i5 to be more specific on which model i'm looking at and in price range. Does hyper-threading play a big role in virtual machines? Each computer is running windows 7 pro 64bit with 16GB of DDR3 RAM and planning on using VMware for running at least 4 virtual machines on each computer as well. Virtual machines are still a little bit new to me.

Our budget needs to be under $10,000 that will go for 25 new motherboards and CPU's along with More RAM for other computers. The parts i'm currently using: Motherboard- Asus P8H61-M LX R2.0 series (1155 socket) , RAM- Kingston HyperX Black 16GB ( 2x8). rest of parts inside computer is standard equipment.
Also, after doing some research think i'm probably going have to go with LGA1150 socket ( haswell) processors. because vendors are not restocking LGA1155 socket motherboards n processors. Once they run out they are out. At least that is what tigerdirect ( vendor i have to go thru) is telling me.
