Hey everyone I was just wanting some advice on whether or not i should wait for the new 800 series graphics cards to be realeased or buy something like a 780 or 780ti.

Solution

It's really up to you. There is no release data (afaik) for any high end 800 cards. GPUs nowadays are released in a tick tock cycle, meaning one new architecture followed by a rebranding of that same architecture. The 700 series is just a rehash of the 600 series. 800 will feature a new architecture and later on a smaller manufacturing process. No one can tell you exactly what this will mean in practice, but if you have the patience I would wait and see what the new line has to offer.

The GTX750 and GTX750Ti have nobbled your sketch though as they are the first of the Maxwell cards and part of the 700 series!

Yeah, it is a strange exception to the rule. The new high end Maxwell cards will most likely be part of the 800 series unless nvidia are really set on confusing their customers.
