I'm thinking about building a PC (my first build)

the specs would be:
AMD FX-8350

Asus M5A78L-M/USB3 Micro ATX AM3+ Motherboard 760g chipset

AMD Radeon HD 7970

2x4GB DDR3 RAM 1866 corsair vengeance pro

now my question is would it be a bad idea to get a 4 core Intel i5 2500k CPU ? since we are going to next gen and PS4 and XBone have 8 core processors, so it's more likely that future game will take advantage of the 8 core CPU so is the FX-8350 future proof ?

FX chips are not APU's the A8, and A10 processors are. FX chips are a processor only and would only work with a GPU like you have listed. Anyways, i would go with the intel if you plan on doing other high end things other than gaming (editing software kinda stuff/modeling) and go with the AMD for strictly a gaming machine, save money and or sink it back into other parts
