So I recently built a new computer and installed my OS on the SSD. I have a 2nd 1tb HDD that I'd like to install all the other junk on, but I can't figure out how to make this happen... Everything just defaults to my SSD when it doesn't give an option.

Solution
Is the second drive seen in Windows Explorer?

Almost every application I've seen this century gives the option to install on a different drive. The default of course is C, but select Custom or Advanced, and you'll be given the option of 'where'.
If the drive is not seen in Disk Management, then you probably need to initialize it and give it a drive letter.

Also, see these tutorials for all your other stuff.

It shows up, and I've set it's letter... Thing is I'm trying to install the asus mobo cd junk, and it doesn't give any option to pick where to install, so it's going straight to the SSD.

motherboard and other drivers....let them reside on the SSD with the OS. In the grand scheme of things, they are tiny.
