I have questions about Hackintosh.

So I've decided to try out Hackintosh and I'm following http://lifehacker.com/5672051/how-to-build-a-hackintosh... . Is Hackintosh compatible with an AMD build? Also could there be a way where I partition my drive so that way, my current Windows 8 OS is untouched?

I believe it's technically possible, but there are more hoops to jump through I think and even then you might not get things stably up and running. Intel would be a better choice (although it sounds like that's not an option for you)

Would it be rational to try with my current situation? (Partitioning the drive)

Would there be a way to partition for Ubuntu instead?

This is a question that is comprehensively answered in the Ubuntu documentation. You should read it before even considering installing Ubuntu.
