I would rather two GTX 680's over a GTX 780ti. Yes the 850w PSU would be able to power them as long as it is a decent one. What model is it anyway? Also a forum search would of got you this.

if you are going to buy 2 680s, don't, it has about the same (slightly higher) performance then a 780ti, but its not worth the hassle to do SLI. SLI 680s is a great choice only if you already have 1 680.

850w for 2 680s is okay.

psu brand: thermaltake 850w. The high tempt for dual v card wouldn't be a problem?

Built:
Cpu: core i5-3570k
Mobo: asrock xtreme6/tb4
Ram: vengeance 32gb
Gpu: evga gtx 680

I think you would be fine with 2 680s, provided you can find one at a good price. It will give you better performance then 780ti.
