For gaming, it would be system 2 (assuming both have GDDR5 memory for their GPUs). Games don't need 16GB's of RAM, and SSD's only help in loading the games. Once loaded, it would be the GPU responsible for a lot of the work; the GT 650M has almost double the processing power of the GT 555M (and from what I remember GT 650M's are great overclockers, if you're interested). Plus system 2 would need to drive less pixels on the screen. You'll definitely achieve more FPS with system 2.

But if we're talking about general system responsiveness using daily tasks like browsing and navigating through folders, it would be system 1, thanks to its SSD.

That's a tough one. For video editing/rendering, usually more RAM = better. I've seen tests where a 16gb RAM set-up gives a 40% performance advantage vs an 8gb one (same CPU). An SSD will also greatly help. I'm gonna give this one to system 1. Then again, you can always upgrade RAM and your HDD later; you can't really upgrade laptop GPU's (not in that spec range, at least).
If you're gonna use Adobe Premiere Pro, make sure to take advantage of its Mercury Playback Engine (which utilizes Nvidia CUDA).
