I don't know what the budget is so i'm just gonna shoot. :p

The i7 is good for both. The i5 lacks HT which might impact performance on video editing.

16gb of ram instead of 8 might be better. I am running 16gb for rendering / video editing and it's cutting it close with 16gb for me.
Maybe 2x8gb so you can upgrade to 32 (if you ever need it)?

An SSD for fast load times?
Samsung 840 Evo 120gb

Rest looks fine. Though i'd get a GTX770 at the least.
