Could I get away with a dual core?

If i built a lower powered rig for my dorm could I run a 660ti or 760 with say an i3-4130 Haswell or something similar and not have bottlenecking issues?

The FX-6300 is a good alternative and often beats i3's in gaming but the drawback is that if you want to upgrade in the future you have less options.

You don't even need to OC the FX-6300 for it to beat i3's but sure you can OC it if you want to and if you get a nice enough board.

The Athlon 750K is also worth looking at, it's VERY cost efficient of a CPU and you could run it fine with a 760 but the Athlon's upgrade path is virtually non-existant.
Most definitely. I would recommend the 4330 for the 4mb increased cache size which has good performance increases over 3mb cache size of the 4130. I've got a 4330 paired with a 760 OC and the benchmark scores are nearly the same as a 4670K with the same 760 OC installed.

I can run Assassins Creed: Black Flag, Crysis 3 and many other games at high to ultra settings at 1080p with 3D enabled and never have frame rate issues.

Ok thats what I had hoped. But is there an AMD alternative that I could compare to this assuming I will overclock?

The AMD vs Intel thing at this level I think is tied a lot to the size of your case, how big a cooler you can fit and what programs you are running. The AMD 760K for FM2 socket and the FX 6300 for AM3+ socket would be your main options I think. The 760K is ~$80-$90 while the FX 6300 is usually around $120. Both can be found cheaper used on Amazon or Ebay.

The intel options, you can go with a i3 3225 for H77/Z77 chipset (Ivy Bridge) or with the 4330 that you are looking at. Check all processors for used prices at this range, there is a lot of turnover and both seem really reliable from my experience.
