I'm looking to upgrade my graphics card, to either of these two cards and can't really be swayed on that.

Either of the cards will be custom watercooled in a 'desk case' with plenty of airflow.

I would like to overclocking the gpu if possible, but. It necessarily by a huge amount.

Will the watercooling allow me to of the 290x enough for it to be worthwhile?

Or will the 780ti just peform better when oc'ed/watercooled?

I would recommend the GTX 780Ti. It beats the R9 290x in most benchmarks, uses less power, compute performance is better. The only advantage of the R9 290x is a higher clock speed (not important as you are overclocking it), 4GB of RAM is more than what is needed for gaming on up to 3 monitors, pixel rate is only a bit better, a bit more render output processors, but not crucial, and a wider memory bus.

I am currently using a Sapphire 290x as I type this, and after 1 - 2 months of studying, i have literally just about seen a tie in these two products. The 290x is indeed a little below the 780 ti, but in this itself, the difference has been no more than 5 fps on average. The price difference so far has been anywhere between 70-150$ depending on the brand you are looking at in favor of the 290x. If you we're to add an after-market cooler to the 290x, given that most of these cards come with stock, i'm pretty confident that the 290x would indeed win over the 780 ti. (For personal interest, i am neither an AMD or nVidia fanboy.)
