Raid and storage GURUS advice needed! Multi OS with Raid and multiple SSDS/HDD

I've tried to google and search and have found little advice on how to effectively do this. I recently just finished my Hackintosh. I'm running OSX natively on one of my two 256gb Samsung Pro SSD's, and Windows 7 on the other (which i just mount that partition inside osz with Paralells when wanting to use a windows program) and just kinda storing random stuff on a 2tb HDD. I'm looking for both speed and maximum redundancy. So i have a total of (2) 256GB SSD's (1) 2TB HDD. If i can, im wainting to Raid 0 the SSD's and to my understanding, that will create 1 recognizeable 512gb drive? Now can I turn that into a raid 1 so everything on the raided SSD's are cloned to my 2tb HDD? I know how to format and partiton the raid 0 so i can dual boot on it. I'm just confused how to make everything cloned yet keep a raid 0 configuration.
