P.S. The reason why my power supply is so huge is because I'm thinking about SLI in the future, but to be honest I'm not sure if its worth it.
So am I doing the right thing with a huge power supply for future upgrades or would it be better to go with the ax 760 and stick to single GPU set up? Thank you for your time.

As said in the OP I've already purchased the i7 because I got it for a good price ($280) at microcenter. You are probably right but I heard in the future more games will use hyperthreading and so I decided to buy it.

if u purchased it then no harm here :D
u should consider changing ur psu to xfx or seasonic as corsair have bad capacitors
