I recently ordered parts for my new PC and I realized that I have ordered 1866MHz Memory (http://ca.pcpartpicker.com/part/gskill-memory-f314900cl9d8gbsr) will it still work fine with an i5-4670K and an Asus Z87-K mobo?
Shouldn't be a problem. Are you mixing it with other memory in there?
Your processor runs at 1600 unless you're overclocking. So the RAM will just run at the slower speed.

No I'm not mixing RAM sticks, but how would one change that so they can run at the 1866 MHz that they are clocked to?
