Would my system, including a GTX 760 + an i5-4670 @3.4Ghz processor be able to record most games at 30 FPS with 1080p while myself keeping 60 FPS? If not, would a 780 Ti be able to record in this way?

I don't recommend as you're paying the premium extra $200 for not much FPS gain, for single card config, I would go with GTX 780 or even GTX 770, and SLI it in the future.
In addition, you will be able to record and play any game without dropping any significant FPS with Shadowplay

I am currently using DxTory, and as I said, I would want to keep a constant framerate of 60 FPS, running at the very maximum settings of the game, recording at 1080p with 30 FPS.

In response to tiny voices, would you suggest the 770 or the 780 Ti? I want to eventually do SLI, and I will be running 3 monitors, and this would hopefully be a long-term fix.

Why not just give it a trial run then? Record your game while noting average fps, try both dxtory and shadowplay. A 780 or 780ti would be a large jump in performace so definitely will.
