Unable to now send my pictures to My Documents as the My documents listing is now missing on the drop down list after clicking send to, , I have to drag the pictures one by one into My Documents

Why don't you just select multiple pictures instead of doing it one by one?

As for your original question, you can follow this guide to add a shortcut to My Documents into the "Send To" menu -- http://gigaom.com/2009/02/03/customize-the-windows-7-send-to-menu-option/
