Getting a new system

My current PC:

Core i7-2600
8GB DDR3 1333
1TB hard drive
GTX 570 overclocked
Windows 7
integrated sound
25" 1920x1080 monitor

I've had this computer for 2 years and I'm ready for a change. There are a number of things I want like faster hard drive, better sound, touch screen, Mac OS, small form factor. It's impossible to get all of these things. For example, if I go the Mac route I won't get touchscreen. If I go the Windows pc route I will still have windows. Basically I'm ready for a change to satisfy at least some of my needs, and on account of I might have a buyer for my old PC. I was really thinking an iMac. But my ideal budget only covers the basic one, a $1200 iMac. It has a core i5 with Intel Iris Pro integrated graphics and a 5400rpm hard drive. Given that it's not running Windows, it might come close to my Core i7 and 7200rpm hard drive in general use performance. But do you think I should pay the extra few hundred dollars for this after the money I get from selling my old PC and I will be happy, or should I go for the $1900 iMac which has a faster Core i5, a screen upgrade to 2560x1440, a 7200rpm hard drive, and a nice GTX 775m? Will the $1200 iMac be too slow?

I want this to be a musician PC. But if I can game on it on the side, I will. Thanks for any help.

Basically I am looking for advice on Macs. However, if someone firmly believes I should go with a Windows PC, I will entertain the idea. I will be making a final decision in 1-3 weeks tops on this, I think, and purchasing at that time.

Question: How low can I go on an iMac without feeling I'm missing out vs. my old machine?
