2 GPUs for 3 Displays vs 1 GPU for 3 Displays

Good Morning, on my current build I am running an NVidia EVGA GeForce GTX 780Ti Super-clocked (no ACX Cooler). I'm running a 750W OCZ PSU, and a single 60Hz Iiyama ProLite E2273HDs 21.5" Monitor.

I would like to expand to three monitors, and have one simple question:

Is it better to simply hook three Monitors up to a single GPU and lose FPS, or Install another GPU in SLI to boost my frame rate, then install the same three monitors?

Any advice would be great!

Are you going to be gaming on all 3(surround) or just one?

seems like 3 displays to 1 gpu is a better. you are using if i correct 1366x768 X3 monitors. I sure the 780ti can easily handle that

I will be using 3 x 1920 x 1080 Resolution Displays, and yes, surround for Gaming using NVidia Surround.
