I have a lap top that I want to connect another monitor to it, but everything I am finding has to do with VGA, but the monitor was connected to my xbox via HDMI, is there a way to set up dual monitors with an hdmi and not a VGA, as of now the HDMI just gives me an external screen, and not dual monitors. I am just curious if there is a way to connect the two and have dual monitors and not an external monitor via HDMI.

You should get the option of External screen only, laptop screen only, duplicate, or Extend. Extend is the option you want for dual screens, or duplicate if you want to see the same on both.
