Ok so my gtx 760 has an 8pin and a 6 pin connector. My PSU has 2x6+2 connectors. For the 6pin, is it safe to plug into the 6+2 and leave the ground wires out or should I buy a 6 to 8 pin adapter?

Just plug your PSU cables, one 6pin and one 6+2pin and leave 2 additional pins just hang inside of your case!
Yes it's safe

You can just plug in the 6 and leave the 2 hanging there. That's why they are separate.

But am I wrong in that those 2 pins are for grounding? Is it safe to leave those unconnected?

Yes it's safe, some graphics cards requires two 8pin connectors that's why they are separate
I also have GTX-760 but MSI version and run mine with one 6pin and one 6+2pin additional 2pins just hanging inside of my case!

Only one of them is a ground, the other is a sense pin that tells the gpu it has an 8 pin connector attached.

The difference between 6pin and 8pin is 6pin can deliver 75W and 8pin 150W that's the difference!

Correct. The extra ground pin allows the third yellow 12v wire in the 6 pin part to function.
