Ok so my gtx 760 has an 8pin and a 6 pin connector. My PSU has 2x6+2 connectors. For the 6pin, is it safe to plug into the 6+2 and leave the ground wires out or should I buy a 6 to 8 pin adapter?

Solution

Yes it's safe, some graphics cards requires two 8pin connectors that's why they are separate
I also have GTX-760 but MSI version and run mine with one 6pin and one 6+2pin additional 2pins just hanging inside of my case!

The difference between 6pin and 8pin is 6pin can deliver 75W and 8pin 150W that's the difference!

Correct. The extra ground pin allows the third yellow 12v wire in the 6 pin part to function.
