No way to know, usually the higher VRAM is necessary when your are dealing with higher resolutions. If you are using a single 1080p screen you should still be fine.

VRAM in sli isn't additive.

Right now no game(except maybe a highly moded Skyrim) use 3GB of VRAM in a 1080p resolution.

Playing with 1440p or higher resolutions can easily reach 3GB in some games.

So the answer is a question: How long will you be okay playing 1080p only?

Is this why lora croft´s hair in tomb raider is so problematic? I recentlly payed tomb Raider with a gtx 660 ti on ultimate... the game was usully around 40-50 frames... defenintlly the new dreviers helped out alot... but when whenever the game did a close-up of the hair everthing went to hell...

yea and I do play in 1080p...

I don't know about Nvidia cards, but AMD have tressfx which models each strand in amazing detail. It takes nearly half of the GPU power again to do this. Can/do you have it enable with your GPU?

SLI will help with performance, but won't increase Vram. 2GB at 1080 should be ok for another year or two, reducing settings, such as MSAA uses much less Vram.
