Should I be worried about possible water damage to my GPU?

So last week I was dusting my computer with a can of compressed air when I guess I either held it wrong, or maybe pressed down to long on it, either way a white spray came out which caused me to stop. I quickly checked my GPU, since it was aimed at the slat that allows air to get between the radiator and the card, for any water residue but couldn't find any. So just to be careful I switched to a new can and continued from there.

Afterwords I turn on my computer and everything is fine so I quickly forget about it.

Fast forward a week and my computer blue-sceens. I'm to surprised to note down the code, since it was the first time that this happened with this rig, but when it boots back up I let it run for a little while doing some minor stress testing, just running my cpu/GPU hard with game/movie while looking at the chipset readings, in which my computer gives back all positive.

It hasn't done anything else since then and I'm just wondering if that could be a problem or if I'm just freaking out over nothing.

It sounds like you just got a little squirt of liquid nitrogen (air is 70% nitrogen). It shouldn't be a problem as long as the computer was turned off when you sprayed it. It turns to gas pretty quickly.
