Would My 2 x GTX 580s be bottlenecked by an OC FX6350?

There isn't a bottleneck between that CPU and and those graphics cards and there's no reason to ditch those cards yet unless you want to pay $500 to switch to a single card or $700 for a good upgrade. The only real issue I see is that the GTX 580's might have just 1.5GB of RAM each. For higher resolutions and higher settings that 1.5GB of vRAM might hold you back a little.

I agree with theonerm2, I don't think you would be getting a bottleneck with dual 580's, maybe with dual 780's but not 580's. Even if you had a slight bottleneck the OC would resolve that. If you're still worried, go ahead an OC the NB as well and then you'll have no bottleneck even if you had something like a 780 in there.

Your 1.5gb ram on each card may limit you when it comes to super intensive games at 2560 res and up but you should be okay for even games like Crysis 3 and BF4 if running at 1080 (possibly not ultra preset as that DEMANDS RAM).

I agree with the guy above the vram of the videocards will bottleneck more than the CPU. Just overclock and your good to go but i would suggest upgrading in a year or 2.
