Hello, I was just about to buy a new GPU when I realised I only had one spare molex connector on my psu. I saw that the adapters have two 4pin connectors to one 6 pin. Would I be able to use only one 4pin connector and still be able to supply enough power to the graphics card?

As the previous poster mentioned, yes, it depends. It's recommended you start looking at power supplies, as clearly yours was not designed with the load requirements you are looking into. Powering devices with less than the designed connections can cause connection to carry more current than they were designed for. You could be asking for premature failure of components, and outright destroyed components if your power supply is cheap and dies catastrophically under the new load.
