I'm looking to upgrade my gpu for eyefinity (3 monitor.not too picky on resolution, preferably 1360x768 or higher) I want the best card I can get without to big of a bottleneck. Will mostly use for battlefield 4

CPU: amd a8-3870k
RAM: 2x4gb crucial ballistix sport 1333 mhz (over clocked to 1600 mhz)
PSU: psu just died. Will purchase lower priced psu to match needs.

You will need a decent PSU for a good card.
If I were you I would go with a R9 290 or a GTX 780 anything less will struggle

His CPU and RAM are too bad to run a 290X or 780, it will bottleneck greatly.

You can get r9 270x : http://www.newegg.com/Product/Product.aspx?Item=N82E168...
That's quite much well suited for your rig.

How well will an r9 270x run eyefinity?

Not that well. If all three monitors are used for gaming, get at least r9 280x, preferebly r9 290

Sorry, yes i think it will bottleneck. Didnt see the cpu. I think you should upgrade to a better cpu then. That one would probably bottleneck highend cards

Well if I bail on eyefinity and upgrade to an i5 4670k would a 270x (maybe crossfire) or 280x run well on a 39 inch 1080p tv?

Yes, but if your budget is really tight, get 8320 and oc it, and maybe 280x. Amd cpus are great, but intels are better.

I have about $1000 to spend, was hoping to spend closer to $600-700 (if i need to upgrade cpu) so I have some extra money for games and a couple other things. There's a computer store near me that I can get a 4670k and motherboard for 300, so I was leaning towards that if I do upgrade my cpu

Sure why not, if you think its cheap, get it :)  just make sure its z87, to get full performance from K processors
