Help choosing GPU + SLI/VRAM issues.

The choices my budget allows - due to an upcoming watercooling venture - are the following, all for 1440p gaming:

1x Titan Black
or
2x 780ti SLI
or
2x 290x Crossfire

I would go with the 780ti package, seeing however how already modern games(modded skyrim, bf4) use up to 3gbs of VRAM + adding a second GPU in the mix the 3GB of VRAM doesn't seem adequate.
On the other hand we have the titan black, with the whopping 6GBs, but at a ridiculous price premium.
And then the 290xs (which would be watercooled) which seem like the middle ground with the 4GB of VRAM. I normally prefer the nvidia quality but I'm confused now.
Waiting for the 6GB 780tis is out of the picture - I'm assuming they will cost around 800 as well.
I don't want to spend 2k on GPUs only to have to change within the next few years :)
I also have a 1080p 144hz monitor laying around - would using that remedy the 3 GB issue? I don't quite understand how the whole VRAM thing works.

Titan black will perform like a 780tis. its new card and it costs less than x2 780ti. Its one card, not two cards in sli which may cause some issues. go for titan
and if uwant 2 cards then go for SLI
