I've looked at the user manuals for a couple motherboards (AMD socket FM2, DDR3). The mobo designs are probably not more than a few years old. Each mobo has 2 slots for memory. Neither manual says whether I can just use 1 of the slots or if I must put in a pair or not. I'm guessing everyone but me knows that since the days of SIMMs you haven't had to fill more than 1 DIMM slot. True, or is it something else?

You can either use 1 or 2. Though matching DIMMs is a must since when they are not matched it would perform slowly than expected.
