on, so im building my self a new gaming pc. it has 2 ssd's. and 1 harddrive. i wanted to have one ssd with windows 8.1, and the harddrive as extra storage. but i would like to put OSX on the second ssd. so when i boot my pc i could choose between booting windows or OSX with an F key. is this possible?

Very possible my friend! I have a very similar setup. Your only hurdle to get over is compatible parts. What's your budget looking like?

I was planning on a intel core i7-4770K, evga super clocked gtx780(reference cooler), Asus Maximus hero mobo, two Samsung ssds. Seagate 2tb drive. Two Asus monitors. (One on Intel graphics just to have, for extra). Later I am wanting to sli. It's going to be about a 2000-2500 build. Would these parts work?

That board is a beast, and 100% Hackintosh compatible, just needs a custom DSDT file. Take a quick peak at tonymacx86 for some guides on that. The gtx780 is also compatible.

Just so you know, SLI is not supported on hackintosh. For editing, you would have to point one graphics card towards whatever editing program you use (I.E. After Effects) for slaving and rendering, and the other for graphic display and work.

Other than that looks great!

Running two cards puts your Mac in a very workstation like environment, which runs editing programs like a beast. I'd stick with two for now.

now that website is saying that the 780ti is, but their are some complications just like the gtx780. and i may just go with a gigabyte board so i dont have to use a custom dsdt file. but do you think you could just email me about this? since you already have the setup, and im building it, id like to have some help from someone with experience!
