Stay away from headsets or headphones that say they simulate "5.1" or "7.1" because it's all BS

You only have 2 ear, you only need 2 speakers or drivers.

Buy quality headphones from a quality company (i.e. Sennheiser, Shure, etc), a DAC, an AMP, and a quality microphone from a quality company.
 


I could not have said this better myself. I have gone through countless pairs of gaming headphones over the years. Last time shopped for headphones I was nothing but let down. I ended up buying a $200 pair of Beyerdynamics DT770Pro 80ohm headphones. I can not tell you how inferior it made every pair of gaming headphones feel. I can wear them for days on end and they sound beyond amazing. The only thing I had to do was get a cheap Zalman clip on mic, which works like a champ. You do have to make sure your sound card can power them though. If they have low resistance, like 32ohm or so a standard built-in sound card can run them fine. However, I had a decent PCI sound card before that ran them great. With my new board I made sure the built-in audio was above and beyond. If that didn't pan out you can grab a decent dedicated sound card like an ASUS Xonar. Even the $30 model will run a 150 ohm headset.

That is a complete placebo.
Try doing the same with apple headphones, change in-game settings to "Headphones".
You will get the same effect.
