Have you actually built this PC already? If it's for gaming you don't need to get that kind of processor, an i5 would suffice. Are you doing a workstation/gaming PC?

Like Tradesmen mentioned, quad channel would be good to go, but for gaming with some basic dual channel would suffice too, and you wouldn't notice any performance difference likely.

Overclocking memory is usually just not worth it at all unless you like to tweak for fun, and it yields insignificant results. No reason to spend 30-40+ dollars more on ram alone to possibly get an extra one or two frames per second.
Ugh, those are horrible choices. The Corsair Dominator is so overpriced.

If you want 8GB, I know I can easily use over 8GB a lot, then this should be a good choice.

For a gaming PC you don't need to worry about memory very much as it makes a menial difference. You can get away with 8GB easily with room to spare too, and save money as well. If you run a dozen things at once then 16GB is probably a good idea.
