The tasks I will be doing are some multitasking (such as recording a game like Rust while in a Skype call) and video editing (with Adobe Premiere Elements)
Will the GTX 660 Bottleneck the i7 at all?

The GPU will not in any way bottle neck your CPU, so don't worry.
