Please suggest if the below laptop configuration will hold good for gaming for at least two years or so?
1. 4th Generation Intel® Core™ i7-4500U processor (4M Cache, up to 3.0 GHz)
2. 8GB 2 DIMM (2x4GB) DDR3L 1600Mhz
3. 1TB 5400RPM SATA Hard Drive
4. AMD Radeon(TM) HD 8850M 2GB GDDR5
5. Windows 8, 64 bit

Will it be able to play next generation games like Watchdogs, etc.?

In a word, yes, but it's impossible to say what game requirements will be like in two years. The processor you have is good but as it's intended for an ultrabook, it's built for low power and good battery life. Neither is particularly good for gaming.

You'll find that the Turbo Boost will kick in pretty much all the time, meaning that the laptop may get hot and noisy. However, you can negate this somewhat by playing at a lower graphical setting which will also boost your frame rate.

Okay. I do realize that predicting hardware requirements is a pretty tough job especially when the industry keeps rolling out new technologies. But can you please suggest me an ultra-book/laptop for gaming purposes?
The above system will cost me around INR 62700 ($1046 approx.).

An ultrabook and gaming laptop are rather different, as one is optimised for portability and battery life and the other is all about power and performance. It's difficult to recommend anything specific as I don't know who your retailers are.

Your original spec is good, but the processor is the weak link. Any of the i7 4700 series of processors will do a good job, so look for those. They're all quad-core with hyper-threading and clocked over 3Ghz which makes them ideal for gaming.
